It’s an indisputable fact in my house serving something with a tortilla means my kids will eat it and possibly lick their plates if I’m not watching to closely. Taco Tuesday is a staple in our house. It’s easy to fall into the ground beef rut with a crunchy corn tortilla though isn’t it ? I knew a few months ago I had to switch it up and add to the rotation when my kids didn’t decimate their Taco dinner. Variety after all keeps things interesting and keeps everyone from getting bored with dinner time. Taco Tuesday doesn’t mean boring in our house anymore it means yummy in my tummy again ! Read below for how we spiced it up on Tuesday nights.
1. Slow Cooker Korean-Style Beef Tacos
Tacos do not mean you are stuck with Mexican food you can switch it up and try a fusion of another cuisine with that wonderfully versatile tortilla. Asian is one of my favorites so my first recommendation to switch up Taco night is Emily Bites Slow Cooker Korean-Style Beef Tacos it’s a family favorite. It employs two of my favorite things my slow cooker and it’s easy to make. Marinating the flank steak before hand enhances the flavor and will have your family going in for seconds. Her use of the slow cooker allows the meat to be fall apart tender at the end. I’m telling you this is the stuff you want to use your slow cooker more often.
2. Chicken and Avocado Tacos with Creamy Cilantro Sauce
Do you love avocados as much as I do ? Probably not I’m a little bit obsessed they are just so good. Adding a delicious sauce over the top of this pan grilled chicken just takes a chicken taco to another level. My husband took leftovers to work the next day and people where drooling wanting to know what he had in his lunch box. Gimmie Delicious Chicken and Avocado Tacos with Creamy Cilantro Sauce are awesome. I recommend you marinate the chicken overnight to have the best bang for your buck flavor wise.
3. Sheet Pan Chicken Fajitas with Avocado Crema
Brace yourself people I’m about to sound like a totally obnoxious fan girl here. These sheet pan fajitas come out super duper awesome because of cooking the chicken on the metal cooling rack. When you do that no soggy mess just yummy goodness in your stomach. Plus the avocado creama is delicious and my kids tried to lick the plate to get the last of it. 4. Cheese Steak Quesadillas
Okay hold onto your meal plans people erase that boring dinner on Tuesday night and make Cheese Steak Quesadillas. Sirloin steak, bell peppers, onions provolone cheese and tortillas mmmmm YUM obviously people it’s the stuff my dinner time dreams are made of. This blogger opened my eyes to the life altering food hack of leaving the tortilla open in the pan. The cheese melts so much faster ! Which is fantastic because it gets the dinner on the table and into little mouths pronto. Make these beauties tomorrow night and double up on the recipe they will ask for seconds.
5. Chicken Tostados
Do you know what a tostado is ? It’s a deep fried tortilla that you top with basically what ever you want. I do the following.
- take 4- 6 boneless skinless chicken breasts and dump them in the slow cooker
- open 1 can of the salsa of your choice over the chicken breasts.
- cook on low for eight hours or high for 4 to six.
- 1 hour before dinner take chicken breasts out and shred them. Put back in slow cooker.
I put out the following on the dinner table along with the shredded chicken to top the tostados
- shredded cheese
- refried beans
- sour cream
- lettuce shreds
- tomatoes chopped up
The kids with the Hubby and I build our tostadas stick them in the oven to warm them up (in other words melt the cheese)
