Stop Pulling Your Hair Out

Meal Planning is a huge pain in the rear sometimes I know. But, it’s easier when you click the download link and use what I’ve put together for you. I like my crockpot a lot and during the summer I LOVE IT. Did I mention I own three different crockpots ? I have a problem people a problem that we entertain a lot and crockpots rock for make your own setups of whatever we do. Why? I love my crockpot because it allows me to cook a meal without standing over the stove and warming up my kitchen during the summer . I don’t do hot and I don’t do sweaty whenever possible. When I do turn on the oven I want to have as little effort involved as possible so I like sheet pan dinners during the summer when I’m out of crockpot ideas. So, right now my crockpot and sheet pans are going to be my B.F.F.’s this week and maybe next week if the weather keeps baking us as we walk outside. This week I’ve included 7 dinners for you 5 are crockpot meals and 2 sheet pan dinners. Low effort, minimal dishes to wash an as always easy and tasty food. All right who’s ready to get some meal planning done ?

The Good Idea Fairies for the Week Are

This week I’m using recipes from 100 Days of Real Food, Dinner at the Zoo, Budget Bytes, The Chunky Chef and Damn Delicious. All of these sites are excellent recipe resources and we all are fortunate they publish quality content and don’t charge us for it. Several of them have fanfreakintastic cookbooks that I own and love. I always say work smarter not harder in the kitchen and these cookbooks do that.

Produce

  • 3 yellow onions
  • 3 heads garlic
  • fresh ginger
  • 2 bunches green onions
  • 1 bunch cilantro
  • 1 cup snow peas
  • 2 cups broccoli florets
  • 1 cup shredded carrots
  • 1 red bell pepper
  • 8 oz. sliced mushrooms
  • 1 bunch parsley
  • 2 sweet potatoes
  • chives

Spices/Condiments/Baking

Meat/Poultry/Pork

  • 3 lb. pork shoulder
  • 1 1/2 lb. boneless skinless chicken breasts
  • 4 lb. boneless skinless chicken thighs
  • 1 lb. ground beef
  • 2lb. beef stew meat
  • 12 slices bacon

Canned Goods/ Miscellaneous

  • 5 oz. can water chesnuts
  • 1 lb. dried lo mein noodles
  • egg noodles
  • white rice
  • 15 oz. can tomato sauce

Frozen

  • 24 oz. frozen broccoli
  • 20 oz. frozen hash browns

Dairy

  • butter
  • 1 cup shredded cheddar cheese
  • 8 egg
  • sour cream
  • parmesan cheese
  • heavy cream
  • cream cheese

Slow Cooker Meals Prep

The Best CrockPot Pulled Pork

  • The evening before
    • mix the first six ingredients together to form a paste
    • chop the onion place in bottom of slow cooker
    • place pork shoulder on top of onion
    • pour the paste over the pork shoulder pieces
    • place stoneware portion of crockpot in refrigerator with lid on
  • Morning
    • set alarm on phone to remind you to start crock pot
    • take prepared pork out of refrigerator and start cooking

Teriyaki Chicken

  • The evening before
    • thaw the chicken
    • whisk together the garlic, ginger, honey, brown sugar, soy sauce sesame oil and rice vinegar.
    • place chicken in slow cooker
    • pour sauce over chicken
    • place stoneware portion of crockpot in the refrigerator with lid on
  • Morning
    • set alarm on phone to remind you to start crock pot
    • take crockpot out of refrigerator and start cooking
  • Evening
    • Prepare Rice 1 hour before dinner is ready in crockpot
    • Slice green onions and prep sesame seeds for garnish

Slow Cooker Chicken Tikka Masala

  • The evening before
    • thaw chicken thighs
  • Morning
  • in a small bowl, combine the garam masala, cumin, turmeric, smoked paprika, salt, cayenne, and some freshly cracked pepper (about 10 cranks of a pepper mill). Sprinkle the spice mix over both sides of the chicken thighs, coating them liberally.
  • Heat the cooking oil in a large skillet over medium-high heat. Once hot, add the seasoned chicken and cook for about 3 minutes on each side, or until well browned (the chicken does not need to be cooked through). Transfer the seared chicken to the slow cooker.
  • Add the diced onion to the skillet and continue to cook until the onions are soft and slightly browned on the edges. Remove the skillet from the heat. Add the onions to the slow cooker, then add 1/4 of water to the skillet and stir to dissolve the browned bits from the bottom of the skillet. Pour the water into the slow cooker.
  • Add the minced garlic, grated ginger, and tomato sauce to the slow cooker with the chicken and onion.

  • Evening
    • Prepare rice an hour before dinner
    • chop cilantro to serve over dish

Slow Cooker Beef Stroganoff

  • The evening before make sure beef stew meat is thawed and ready to cook in the morning
  • Morning
  • Heat the olive oil over medium high heat in a large pan. Season the beef with salt and pepper on all sides.
  • Add half of the beef to the pan in a single layer. Brown for 3-4 minutes on each side. 
  • Add the meat to the slow cooker. Repeat the browning process with the other half of the beef.
  • Add the mushrooms and onion to the pan and cook for 3-4 minutes or until browned.
  • Add the mushrooms, onion and garlic to the slow cooker.
  • Pour 1 1/2 cups beef broth and Worcestershire sauce into the slow cooker and stir to combine.
  • Cover the slow cooker and cook on LOW for 6-8 hours or HIGH for 4 hours.

Easy Crockpot Chicken Lo Mein

  • The evening before make sure chicken thighs are thawed
  • The morning or evening before place chicken thighs in bottom of crockpot . Whisk together sauce ingredients and pour over chicken thighs. Either start cooking or place stoneware portion of crockpot in fridge covered until needed.
  • Evening
  • Remove chicken from slow cooker, shred, then add back to slow cooker with juice and sauce.
  • Add broccoli, snow peas, carrots, bell pepper and water chestnuts, and stir.  Cover and cook on HIGH for 15 minutes, until vegetables are tender.
  • While vegetables are cooking, boil and drain pasta per package directions, then add to crockpot with chicken and vegetables.  Stir well, then serve with garnishes, if desired
